Chapter 03: Moro | Sulu

SULU

Mindanao, the southernmost group of islands in the Philippines, boasts an incredibly diverse culinary and cultural landscape. This cuisine is heavily influenced by our Southeast Asian neighbors, including Malay, Indian, Indonesian, Thai, and Middle Eastern flavors.

Chef Cat's menu reflects the diverse tastes of these southern shores, including its Muslim ethnolinguistic groups like the Tausūg, Maranao, and Yakan. Our first dinner in this new pop-up series will offer a tasting menu featuring 13 dishes, with optional beverage pairings. Enjoy our pork-free menu using Halal meat.

Sulu is a province in the Philippines in the Sulu Archipelago, and part of the Bangsamoro Autonomous Region in Muslim Mindanao (BARMM). Named from the historic Sultanate of Sulu which spanned from northern Borneo through parts of Mindanao, we highlight foods of several Muslim Filipino ethnolinguistic groups, known as ‘Moro.’
